Firstly – congratulations for the success of the first ever butterfly tea parties held in 2010. The amount you raised for hospices was extremely impressive – over $12,000 from events throughout the country, then the donation of just over $5,000 to support the national work of Hospice NZ – what a tremendous amount of support.

I think that the recent earthquake here in NZ is a timely reminder that we don’t know what is around the corner for us to face, and the importance of cherishing those close to us and living every moment.

Getting together for butterfly tea party sounds like the perfect excuse to do just that! - and all the money raised will support people and their families who are using hospice services – what a wonderful gift!

Orange Manuka Honey Biscuits

These biscuits are gluten free, but you won’t be able to tell! I love the flavour of manuka honey but the real delight of these biscuits is their delicious chewiness. Cooked any longer, they become very crisp, but that’s not a bad thing either.

Makes 20

•  2 cups ground pecans (you can use walnuts or almonds for a change)
•  1 cup caster sugar
•  Grated rind of 1 orange
•  2 egg whites, beaten to soft peaks
•  1 tablespoon manuka honey, warmed
•  Icing sugar to dust (about ˝ cup)

Preheat the oven to 160°C. Line two baking trays with nonstick baking paper or silicone sheets.

Mix the ground pecans, caster sugar and orange rind together then add the beaten egg white and honey. Scoop up small balls of the mixture and roll them in icing sugar to coat well. Press them flat on the trays, allowing a bit of room to spread out.

Bake for 15–18 minutes and cool on a wire rack. Dust with icing sugar.
